This Granola was a huge hit with our retreaters last week so I am including it onto our blog.
100g Coconut Oil
150ml Maple Syrup
Zest of 1 Orange, plus juice of one half
Seeds from 1 Vanilla Pod
3 tsps Ground Cinnamon
400g Jumbo Oats
70g Sunflower Seeds
50g Pumpkin Seeds
40g Flaked Almonds
50g Hazelnuts or whatever nuts you like
60g Coconut Chips
100g Raisins or Sultanas
Makes about 1KG
Preheat the oven to 160 degrees Centigrade (fan 140). Line a large baking tray with baking paper.
Heat the coconut oil and maple syrup gently until melted, remove from the heat and add the vanilla seeds and orange zest, juice and cinnamon.
Mix all the other dry ingredients apart from the hazelnuts, coconut chips and raisins/sultanas. Pour in the liquid mixture and stir until all ingredients are fully coated.
Spread the mixture on the baking tray and bake for 45 minutes stirring frequently until golden brown. Add the coconut chips 5 minutes before the end then stir in the nuts and raisins/sultanas after you have taken the mixture out of the oven.
Store in an airtight container and it will last for a couple of weeks.
